Pan-fried squid rings – Easy and tasty recipe

A seafood main course today: pan-fried and braised squid rings with Taggiasca olives, capers and a thick, creamy little sauce—perfect for dipping!

Personally I prefer to buy larger fish like SEA BREAM or SEA BASS rather than this kind of mollusk because they require longer cooking since they are rich in connective tissue that is hard to digest and therefore need longer cooking times.

However, especially when braised and cut into strips—oops ONE—the squid cooked in a pan and braised is really appetizing and we enjoyed it a lot as a family!

Pan-Seared-Squid-Rings

Ingredients

  • 1.1 lbs squid rings (thawed)
  • 1 1/4 cups tomato passata
  • 1 clove garlic
  • 1/2 glass white wine (still)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste chili pepper
  • to taste Taggiasca olives
  • to taste salt-packed capers (desalted by soaking in water)

Steps

  • 1) I bought the fish already thawed at the Pam supermarket, SO I started the recipe with the squid rings by putting a little extra virgin olive oil and the garlic clove in a large pan or wok and letting everything soften and turn golden for a few minutes.

    2) Now I add the tender squid rings to the pan and after a couple of minutes I pour in the still white wine, letting the alcohol evaporate.

    3) Then I add the tomato passata with half a glass of water and, after covering the squid in the pan with a lid, I continue cooking for at least 45–50 minutes, checking and adjusting the salt.

    4) I also add a fresh chili or some dried flakes, some desalted capers, a few olives, a pinch of chili and mix well to evenly flavor the thawed squid in tomato sauce.

    5) A pinch of parsley before serving and …
