A seafood main course today: pan-seared and stewed squid rings with Taggiasca olives, capers, and a thick, creamy sauce perfect for dipping bread!
Personally, I prefer to buy fish like SEA BREAM or SEA BASS rather than this type of mollusk because they require longer cooking due to their rich connective tissue that is difficult to digest and therefore needs longer cooking times.
However, especially when stewed and cut into strips, oops, rounds, pan-seared squid are truly appetizing, and our family thoroughly enjoyed them!

Ingredients
- 1.1 lbs squid rings (thawed for me)
- 1.3 cups tomato sauce
- 1 clove garlic
- 1/4 cup white wine (still)
- to taste extra virgin olive oil
- to taste salt
- to taste chili pepper
- to taste Taggiasca olives
- to taste salted capers (desalted in a water soak)

Steps
1) I bought the fish already thawed at the Pam supermarket, SO I started the seafood recipe by putting a little extra virgin olive oil and the clove in a large pan or wok, letting it brown for a few minutes.
2) Now, I add the tender squid rings to the pan and after a couple of minutes, pour in the still white wine, allowing the alcoholic part to evaporate.
3) Then, I pour in the tomato sauce with half a glass of water, cover the squid in the pan with a lid, and continue cooking for at least 45/50 minutes, checking and adjusting the salt.
4) I also add a fresh chili pepper or some dried flakes, a few desalted capers, some olives, a pinch of chili, and mix well to evenly flavor the recipe with thawed squid in tomato sauce.
5) A pinch of parsley before serving at the table and …
