PARADISE FILLED SHORTBREAD COOKIES

Paradise filled shortbread cookies today, and I confess that these filled shortbread kisses are uniquely delicious, perfect for enjoying at snack time or breakfast!

It’s a simple lemon-flavored shortcrust pastry filled with 3 different creams pistachio, hazelnut, and coffee, where I used MASCARPONE and Babbi creams, a gift from my younger sister!

You can also fill the SHORTBREAD with whipped cream, Nutella, jams or enjoy them simply with tea or coffee for a delicious snack.

PARADISE FILLED SHORTBREAD COOKIES

INGREDIENTS FOR PARADISE FILLED SHORTBREAD COOKIES RECIPE

  • 1 1/2 cups All-purpose flour
  • 1/2 cup Potato starch
  • 2 egg yolks
  • 2/3 cup powdered sugar
  • 2/3 cup Butter
  • 1 organic lemon (only grated zest)
  • 1 1/3 cups Mascarpone (filling)
  • 2 tablespoons Sugar (filling)
  • 2 tablespoons coffee cream (I use Babbi)
  • 2 tablespoons Hazelnut cream (I use Babbi)
  • 2 tablespoons pistachio cream (I use Babbi)

PREPARATION FOR PARADISE FILLED SHORTBREAD COOKIES RECIPE

  • For the shortbread dough PARADISE, mix the flour, potato starch with the powdered sugar. Then add the egg yolks and diced butter, mixing it all together.

  • Form a dough ball, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.

    Preheat the oven to 356°F and start making the paradise shortbread cookies.

  • Line the baking tray with parchment paper and proceed to make the paradise cookies using a round cutter: mine is 1 1/2 inches in diameter.

    Place the COOKIES on the tray and bake for 7/8 minutes just until they are golden, so watch closely!

  • Now, once baked, let them cool and prepare the fillings.

    Divide the mascarpone into 3 parts and to each add the coffee cream, hazelnut cream, and pistachio cream.

  • Fill each cookie paradise shortbread with the creams, taking care to dust first the shortbread circle that will act as the cookie hat (at least I do it before, but you can also do it after you have already filled the shortbread).

  • Place the paradise filled shortbread cookies on a serving tray and serve them at the table! They are very crumbly and very, very delicious, so… enjoy your meal!!!
