Parmesan Gratin Tomatoes Ready in 15 Minutes

A very appetizing and super quick side dish because the parmesan gratin tomatoes ready in 15 minutes … are really so!!!!

To the grated cheese, I added a good mince of parsley and fresh basil but if you have some pecorino, mozzarella, or scamorza in the fridge, or other herbs like chives, use them all and the result will be equally delicious and fragrant!

This side dish was paired with oven-cooked sea bass, just gutted and nothing else, without internal stuffing or anything else, and our dinner was simple and pleasant!

For these ingredients you see in the photo 3 firm and ripe round tomatoes I used 3 tablespoons of EVO oil, but clearly, the water contained in the vegetables came out during cooking and it seems that they are swimming in oil… but it’s not so!

The parmesan gratin tomatoes ready in 15 minutes can also be a worthy accompaniment to grilled chicken breasts, wine or lemon scallops, and even roast chicken or spatchcock chicken!

A dilemma …should tomatoes be stored in the fridge or not?
Some studies, like research conducted at the University of Florida, state that after storage at 41°F for 7 days, 70% of the characteristic flavor of the tomato is reduced, making it mealy.
This study advises against storing them at temperatures below 50°F/54°F and instead to keep them at room temperature, even on the balcony but away from the sun.
Recently, however, a German study shows that it is the variety of the tomato that conditions the possibility of being stored in the fridge, but personally, I recommend buying them and consuming them as soon as possible and forgetting all the studies!

Ingredients RECIPE PARMESAN GRATIN TOMATOES READY IN 15 MINUTES

  • 3 firm and ripe round tomatoes
  • 12 tablespoons grated Parmesan cheese
  • generous mince of fresh basil and parsley
  • 3 tablespoons extra virgin olive oil
  • to taste salt and pepper

Tools RECIPE PARMESAN GRATIN TOMATOES READY IN 15 MINUTES

  • Cutting Board
  • Knife
  • Baking Tray
  • Bowl
  • Spoon

Preparation

  • Wash and dry the firm and ripe round tomatoes.

    Cut them into slices about 3/8 inch thick.

  • With a sharp knife and on a cutting board, finely chop the herbs, that is, the basil and parsley.

    Add the mince to the Parmesan mixing well to have a homogeneous breading

  • With the spoon, carefully place a little aromatic breading on the slice of round tomato.

    Continue until all the slices are seasoned, and if there is breading left, distribute it randomly in the tray.

  • Salt and pepper the vegetables and add 3 tablespoons of extra virgin olive oil.

  • Place in a pre-heated oven at 392°F the tray with the seasoned tomato slices and bake for about ten minutes.

    If you want to increase the browning, finish cooking by putting in the oven in grill mode for another 2/3 minutes.

  • At the end of cooking, let cool for 3/4 minutes then serve this simple, quick, and appetizing side dish at the table!
