Pasta and Borlotti Beans

A pasta and borlotti beans slightly revisited because instead of being the classic soup or a brothy dish, the pasta in this case is spaghetti and therefore a tasty and spicy dry dish!! I slightly modified a recipe I saw on Più cucina and the dish is very tasty and very appetizing, at least for us who devoured it!!!

Ingredients RECIPE PASTA AND BORLOTTI BEANS

  • 11 oz Spaghetti No. 5
  • 2/3 cup Borlotti beans (boiled)
  • 1 cup Tomato sauce
  • 4 Sun-dried tomatoes in oil
  • 1 small onion
  • 1 clove garlic
  • to taste chili pepper
  • to taste Extra virgin olive oil
  • to taste Parsley (chopped)

  • Frying Pan

Preparation

  • In a frying pan, add a little extra virgin olive oil and brown the garlic clove with the chopped onion. Also, add the coarsely chopped sun-dried tomatoes in oil.

  • After a few minutes, add the borlotti beans and the tomato sauce. Season with salt and add the chili pepper.

  • Cook for about 20 minutes and if it dries too much, add a ladle of water.

    Meanwhile, boil the spaghetti in salted boiling water and drain them al dente, saving a little pasta cooking water.

  • Pour them into the pan with the borlotti bean sauce, add the water, and stir the pasta and borlotti beans together well.

  • Serve the plates, sprinkle with chopped parsley, and serve immediately.
