PASTA with Oven-Baked Mushrooms

A tasty first course with a quick final step in the oven … here’s the pasta with oven-baked mushrooms prepared today! I used simple champignons but you can also use pleurotus, pioppini, and more depending on the availability at your local grocery store.

As for pasta, today I used the trottole from the company Le stagioni d’Italia with Senatore Cappelli wheat and bronze drawing, which holds up wonderfully during cooking and really has an extra edge…

WHAT ARE THE MOST COMMONLY USED MUSHROOMS IN COOKING???
1) CHAMPIGNONS: available year-round and extremely versatile;
2) PORCINI: good raw, sautéed, or dried;
3) CHANTERELLES: looks like a trumpet and is best in simple preparations;
4) MORCHELLA: available dried and fresh, it is poisonous and therefore must be cooked, giving a delicate almost sweet aroma;
5) PIOPPINI: perfect in preparations that require long cooking like stews and roasts;
6) SHIITAKE: the excellence of oriental dishes, also used to make excellent soups.

Ingredients for PASTA WITH OVEN-BAKED MUSHROOMS

  • 11 oz pasta
  • 9 oz champignon mushrooms
  • 1 shallot
  • 11 oz sausage
  • 14 oz tomato pulp
  • 2/3 cup heavy cream
  • to taste Extra virgin olive oil
  • to taste Parmesan cheese (grated)
  • to taste salt and pepper
  • to taste Butter and breadcrumbs (for the baking dish)

FOR THE PREPARATION OF THE PASTA WITH OVEN-BAKED MUSHROOMS RECIPE

  • In a pan

    sauté the peeled and finely chopped shallot in a little oil.
    Then add the crumbled sausage and let it brown for about ten minutes.

  • Add the champignon mushrooms to the mixture on the stove and let it cook for about 8/10 minutes over low heat.

  • Now pour the tomato, adjust the salt and pepper, and continue to cook for 20/25 minutes. Add the cream now, mixing the finished sauce well.

  • Cook the pasta as usual in salted boiling water and then drain it al dente.

    Season it in a bowl with the sausage and mushroom ragù also adding 2/3 of the grated Parmesan.

  • Butter and sprinkle with breadcrumbs the chosen baking dish (removing the excess, eh!) and spread the pasta with mushrooms and sausage in it.

  • Sprinkle with the remaining cheese and bake at 375°F for about 15/20 minutes. Take it out and onto the table!!! Enjoy your meal!!!
