My son Andrea doesn’t eat much fruit but loves pears, so today I thought I’d make him the recipe for pear tart with almond cream and puff pastry, easy and refined and perfect for any season given the quick cooking time!
I used some William pears bought at Aldi supermarket, very firm and sweet, really very good!
As I often do, I used a package of ready-made puff pastry that I always have in the fridge and some almond flour always bought in a discount store near my home.
The Almond Cream is abundant, so we can also use a 9.5-inch tin and a greater number of pears!
HOW TO VARY THE PEAR AND ALMOND CREAM TART?
– with Chocolate
I can add dark chocolate shavings on top of the almond cream before placing the half pears. The contrast between almonds and chocolate is irresistible.
– with Apples
I replace the pears with apples like the Fuji variety and add a pinch of cinnamon powder to the cream even if it’s perhaps a touch for a colder season!
– with Hazelnut Cream
We can replace the almond frangipane cream with a hazelnut frangipane by replacing the weight of the almond flour with hazelnut flour which goes perfectly with pears.
– Vegan Variant
It is mandatory to use a butter-free puff pastry and prepare a vegan frangipane cream with vegetable butter or margarine and almond or oat milk.

Ingredients
- 1 package puff pastry
- 115 g sugar
- 2 eggs
- 70 g almond flour
- 3 pears
- 4 tbsp butter (melted and warm)
- 1/4 cup flour

FOR PREPARING THE RECIPE WITH PUFF PASTRY – Easy and Refined
and preheat the oven to 375°F static mode.
In a bowl, I mix sugar with eggs, using electric whisks.
I add the flour, almond powder, and also incorporate the melted and warm butter.
I mix well to blend all the ingredients.
I roll out the puff pastry lining a pan with high edges (as you see I practice what I preach, and the filling was almost overflowing)
Now I put the pear and cream tart in the oven already hot and bake for about 30/35 minutes, but as always the cooking time may vary depending on our home oven model.
When cooked, I let it cool and then serve at the table, perhaps accompanying the pear and almond tart with a scoop of vanilla ice cream!

If we don’t have almond flour, just put the peeled almonds in the mixer and blend patiently intermittently, not heating the blades too much to avoid warming the nuts!
The puff pastry goes very well because it becomes crispy and tasty, but we can also use shortcrust pastry
