My son Andrea doesn’t eat much fruit, but he loves pears, so today I decided to make him the recipe for a pear tart with almond cream and puff pastry, easy and refined and perfect for any season due to its fast cooking time!
I used some William pears bought at Aldi supermarket, very firm and sweet, really very good!
As I often do, I used a package of ready-made puff pastry that I always have in the fridge and almond powder always purchased at a discount store near home.
The Almond Cream is abundant, so we can also use a 9.5-inch mold and a larger number of pears!
HOW TO VARY THE PEAR AND ALMOND CREAM PIE?
– with Chocolate
I can add dark chocolate shavings on top of the almond cream before placing the halved pears. The contrast between almonds and chocolate is irresistible.
– with Apples
I replace the pears with apples of the Fuji variety and add a pinch of ground cinnamon to the cream, even if it might be more suitable for a colder season!
– with Hazelnut Cream
We can replace the almond frangipane with a hazelnut frangipane by substituting the weight of almond flour with hazelnut flour, which goes wonderfully with pears.
– Vegan Variant
Mandatory to use a butter-free puff pastry and prepare a vegan frangipane cream with vegetable butter or margarine and almond or oat milk.

- 1 package puff pastry
- 3/4 cup sugar
- 2 eggs
- 3/4 cup almond flour
- 3 pears
- 1/4 cup butter (melted and cool)
- 1/4 cup flour

and preheat the oven to 375°F static mode.
In a bowl, mix the sugar with the eggs using electric whisks.
Add the flour, almond powder, and also incorporate the melted and cool butter.
Mix well to combine all ingredients.
Roll out the puff pastry lining a pan with high sides (as you can see, I preach well and practice poorly and by now the filling was coming out)
Now bake the cake with pears and cream and bake in a preheated oven for about 30/35 minutes, but as always, the cooking time may vary depending on our home oven model.
Once cooked, let it cool and then serve at the table, perhaps accompanied by a scoop of vanilla ice cream with the pear and almond cake!
