PEAR AND MASCARPONE CAKE RECIPE
Pears are one of the few fruits my son eats and even though he is almost an adult, as a doting mother and a bit of a meddler, I like to try new recipes for him and for myself too, as I don’t turn away from almost any dessert.
Today, I found a super soft pear and mascarpone cake recipe in a little cooking magazine, and here we are ready to test and taste it with great excitement… Shall we start cooking, will you join me??
The pear and mascarpone cake is delicious, keeps well for 2/3 days, and is even more indulgent if served with a scoop of vanilla ice cream or a soft custard.

Ingredients for PEAR AND MASCARPONE CAKE
- 200 g Flour
- 50 g Potato Starch
- 180 g Sugar
- 3 Eggs
- 200 g Mascarpone
- 2 Pears
- 50 g Butter
- 1 3/4 packet Baking powder
- to taste Powdered sugar (optional)
Tools for PEAR AND MASCARPONE CAKE
- Stand Mixer
- Bowl
- Cake Pan
- Spatula
- Knife
Preparation
In a bowl, place the soft butter with mascarpone and sugar.
Beat with electric beaters until you get a fluffy and homogeneous mixture.
Now add the eggs one at a time, adding the next only after the previous one has been absorbed, always using the beaters.
Sift the flour with the potato starch and baking powder.
With a spatula and upward movements, add the powders to the previously made cream in batches.
Butter and flour the cake pan (or line it with parchment paper) and pour in the pear and mascarpone cake mixture.
Level the surface well and arrange the peeled and cored pear slices radially on top.
Place the pan in a preheated oven at 340°F for about 45/50 minutes or according to your oven’s characteristics.
Once cooked, as confirmed by the toothpick test, remove from the oven and unmold the pear and mascarpone cake.
Once warm, sprinkle with powdered sugar if desired and serve at the table…
