I add the tomatoes, season with salt and pepper, add a pinch of chili pepper if you like, and let cook for about 20 minutes on low heat with the lid on.
I cook the penne al dente and dress them with the sauce with pancetta, mixing everything well and adding some grated organic or untreated lemon zest if desired.
I chose to assemble the individual plates and add the caciocavallo only at this moment to avoid having too many filaments in the pot that sometimes end up sticking everything a bit, but you do as you prefer!
