Penne with Broad Beans and Bacon

Today, penne with broad beans and bacon , a seasonal pasta dish with a vegetable I don’t particularly love but reminds me of my mom, who used to eat a lot from our garden, simply opening the pod while I watched nearly horrified!!

WHAT ARE THE BENEFITS OF BROAD BEANS?
Broad beans are good for the body and contain:

Ingredients

  • 10.5 oz penne rigate
  • 8.8 oz CLEANED broad beans
  • 3.5 oz bacon (diced)
  • 1 shallot (finely chopped)
  • to taste pecorino romano (grated)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Preparation of the Penne Recipe with Broad Beans and Bacon

  • For the penne with broad beans and bacon, you need cleaned broad beans, so…

    remove the broad beans from the pod and boil them in a saucepan in plenty of salted water for about 5 minutes, reserving a ladle of cooking water.

    Once they are cool, remove the skin covering them until finished.

  • In a pan that will later hold the pasta and sauce, add a drizzle of extra virgin olive oil and when it sizzles add the finely chopped shallot.

    Continue to cook gently softening it, adding a little cooking water if needed.

  • Also add the diced bacon to the pan and brown it for 3/4 minutes, then add the broad beans.

    Stir well and turn off the heat.

    Meanwhile, bring a pot of salted water to a boil for cooking the penne.

  • Drain the pasta, pouring it directly into the pan with the sauce, seasoning with salt and pepper.

    Add the grated pecorino romano and a splash of cooking water, raw oil if needed, and serve immediately at the table.
