Penne with pumpkin, pioppini mushrooms, and gorgonzola is a very tasty dish that’s truly delicious which I was supposed to make at an event, but they didn’t follow the established preliminaries, so I, who hate improvising when I work (and cooking at an event is WORK and also very demanding for me), decided to forgo it… too bad, it would have been wonderful to do this show cooking! Moving on…
This first course with short dry pasta like penne, pennette, sedanini, or others was cooked risotto-style directly in the sauce, but if you don’t have time to monitor the cooking minute by minute, you can normally sauce your dish with this comforting, enveloping, and very Italian sauce!!! Ingredients RECIPE PENNE WITH PUMPKIN, PIOPPINI MUSHROOMS, AND GORGONZOLA
- 300 g pasta (I used penne)
- 180 g pumpkin
- 250 g pioppini mushrooms
- 250 g gorgonzola
- 50 g leeks (only the white part)
- to taste extra virgin olive oil
- to taste salt and pepper
- to taste grana cheese (optional)

Preparation
Remove the first layer of the leek and using only the white part, prepare a sauté that you will let stew for a few minutes in extra virgin olive oil.
Add the pumpkin cut into cubes, mixing the sauce and continuing to cook for a few minutes.
Add the pioppini mushrooms, well cleaned, washed, and cut into noticeable pieces.
Let it cook for 4/5 minutes, mixing well and seasoning with salt and pepper.
Personally, I cooked the pasta risotto-style, so I added the dry short pasta (for me, penne), adding water as needed and bringing the pasta to the right cooking point.
Shortly before serving, add flakes of gorgonzola, blending and tossing the penne with pumpkin, pioppini mushrooms, and gorgonzola.
Serve this very tasty and flavorful first course with the pioppini mushrooms… enjoy your meal!
