PEPPER AND POTATO CREAM

Ingredients
- 2 potatoes
- 1 bell pepper (red)
- 1 Tropea onion
- to taste extra virgin olive oil
- to taste salt
- to taste sweet paprika
Preparation
For the pepper and potato cream, boil the potatoes starting from cold water and drain them when they are tender but not overcooked.
Pass them through a potato masher while still hot, collecting the puree in a bowl.
Finely chop the onion and sauté it in a pan with a little extra virgin olive oil
Wash the bell pepper, removing the seeds and internal filaments.
Cut it into cubes and add it to the onion, cooking it for 7/8 minutes: it should be tender.
Put the cooked onion and bell pepper in a mixer and blend everything.
Add this sauce to the mashed potatoes to obtain a creamy sauce.
Season with salt and add paprika, mixing well this kind of savory mousse.
Serve this sauce with sliced flatbread with croutons and savory biscuits for a tasty appetizer…
