Green beans, also known as string beans or snap beans, belong to the Legume family. The bush-shaped plant produces pods of various shapes and colors ranging from white to purple, passing through all possible shades of green.
How to cook green beans quickly?
We can boil them in salted water, then season them with oil and lemon juice, or once cooked, sauté them in a pan with oil and butter.
Green beans are also excellent in brothy soups, in purees with mixed vegetables.

Ingredients PESTO LASAGNA with green beans and potatoes

  • 9 oz lasagna sheets
  • 20 oz béchamel sauce
  • 9 oz Genoese pesto
  • 10.5 oz Potatoes
  • 7 oz green beans
  • to taste Parmesan cheese (grated)
  • to taste salt and pepper

Preparation of the Recipe Pesto Lasagna with Green Beans and Potatoes

  • Boil the cleaned vegetables separately, trimming the green beans and the potatoes.

    Then let them cool* or warm and preheat the oven to 375°F.

    Place a spoonful of béchamel sauce on the bottom of the baking dish and a first layer of prepared egg lasagna sheets.

  • Mix the béchamel sauce with the Genoese pesto, blending the two well.

    On the first layer of lasagna sheets, place the pesto béchamel, some diced boiled potatoes, and pieces of green beans.

    Sprinkle with grated Parmesan cheese and continue layering until all ingredients are used up.

  • Bake the pesto lasagna with green beans and potatoes for about 35 minutes, or according to your oven’s characteristics.

  • Let the Genoese pesto lasagna cool slightly, then serve and plate.

  • A complete baked dish with a special taste… enjoy your meal!

Tips and notes

*Remember that if you want to maintain the green color of the vegetables, you need to boil them and then place them in a bowl with ice water after boiling. The green color of vegetables is due to chlorophyll, which contains a magnesium ion.

The high temperature of boiling causes hydrogen ions released during cooking to replace those of magnesium, turning the bright color of chlorophyll into a dull, sad green.

By placing the vegetables in ice-cold water, the cooking process is instantly halted, and the chlorophyll remains in its best state, beautifully green!!!
