Pineapple Skewers with Coconut Sauce

The word skewers makes me think of chunks of meat and sausage cooked on the grill, but… Who says skewers are only savory? Today I’m taking you on vacation with an easy, fresh, and slightly exotic dessert: grilled pineapple skewers with coconut sauce! They are prepared in minutes, smell of summer, and instantly feel like summer 😄.
Simple, juicy, slightly caramelized treat with that coconut cream accompaniment that makes you say “one more, please!”

Ingredients

  • 1 pineapple
  • 1 package coconut milk (270 ml of the thick type)
  • 2 teaspoons cornstarch (to be added sifted)
  • 2 tablespoons sugar
  • 2 tablespoons white rum

  • remove the top and vertically remove all the skin from the fruit.

  • Then, proceeding vertically again, slice the flesh into 4 pieces around the core, which will be discarded as it’s too hard and unusable.

  • Make cubes which you then skewer and proceed to make the coconut cream.

  • Pour the contents of the can into the pan then add sugar, rum, and sifted cornstarch. (No rum? add a pinch of cinnamon powder)

    Then thicken on low flame for a few minutes.

  • Let cool while on a hot grill plate, grill the skewers for a few minutes and then serve them with the coconut sauce on the side.

Storage

Storage of coconut cream

In the fridge (airtight): up to 3 days
➤ I recommend taking it out 10-15 minutes before serving or slightly warming it to make it fluid again.

Freezing: not recommended (the sauce separates when thawed and it’s not ideal)

Storage of grilled or caramelized fruit (pineapple, peaches, etc.)

In the fridge, alone (cooked and cooled): up to 2 days in an airtight container.
➤ To be consumed at room temperature or slightly warmed to regain the “grilled caramelized” taste.

Storage of the combination 😉 (skewers already dressed with cream)
Better to avoid if possible, but if you really can’t:
In the fridge for a maximum of 24 hours, covered.
The fruit releases water, and the cream can become a bit watery or diluted.

Practical last tip:
For optimal results, store separately:
– The cream in a small jar or closed bowl
– The grilled fruit in a low and wide container
