PIRATE STYLE PASTA

Pirate style pasta, an easy, quick, and very tasty first course!

A creamy and simple sauce wraps around the penne I chose and creates an intriguing balance that makes this seafood dish truly pleasant and balanced.
Personally, I cleaned both the shrimp tails and the clams to ease the bite…and to avoid hearing the young ones at home grumble!!!

What ingredients to use for pirate style pasta?

Fresh fish
or frozen fish like mussels, shrimp, clams!

No problem with frozen foods also to facilitate preparation since in these long days of lockdown it is better to be good* and not go out too often to stand in line at supermarkets!

What pasta to use for pirate style pasta?

Well, I would say

• penne,
• small penne
• orecchiette
• sedanini
• farfalle and

in general, short pasta is perfect for this creamy and easy seafood sauce!

A perfect sauce for spaghetti with fish sauce or gnocchi with fish sauce in short…great for many formats and for a very tasty fish ragù!

Clearly, it is NOT a recipe to be made in advance but needs to be made and eaten immediately to keep the delicious sauce and the taste of the sea.

*Last night the Prime Minister Conte said that Phase 2 will start on May 4th… I don’t like talking about politics (which I love and follow intensely) neither here nor on the social networks I frequent, however, that after 2 months we are still discussing how to procure and how much to charge for masks seems absurd to me! ** Republishing today March 19, 2021, this recipe on my FB page I reread these words… Conte after Conte 1 and Conte 2 has returned to teaching at the University of Siena now we have Draghi as Prime Minister but we are still in a very serious situation: full hospitals, many infections, many deaths, vaccines that are and ARE NOT delivered, and many, many concerns!
*** Here we are… Italians have practically forgotten about Covid (we got tired eh eh) even if the data now (September 27, 2023) say that there is a great increase in infected and hospitalizations! The government under Meloni has removed all the various precautions for the infected and therefore for now we are navigating by sight and for those working in the world of education it’s not easy!

Ingredients PIRATE STYLE PASTA

  • 11 oz Penne Rigate (or La Molisana n°19 small penne rigate for me)
  • 3/4 cup cooking cream
  • 3.5 oz tomato sauce (for me Agromonte cherry tomato)
  • 9 oz Clams (cleaned, purged)
  • 2 cloves Garlic
  • 1 lbs shrimp tails (also frozen and cleaned from the intestinal vein)
  • to taste Chopped parsley
  • to taste Dry white wine
  • to taste Extra virgin olive oil
  • to taste chili pepper (optional)

FOR THE PREPARATION OF PIRATE STYLE PASTA

  • To prepare the pirate style pasta first, we prepare the clams in a covered saucepan that we leave on the flame for about 4/5 minutes to open the mollusk shells.

    Remove the shell from the crustaceans (also frozen) and after making a small cut, proceed to remove the black intestinal vein.

    Rinse thoroughly under running water.

  • In a large frying pan, place the garlic cloves with a drizzle of EVO oil.

    Add the shrimp tails and let them cook for 2/3 minutes, just enough time to change color.

    Pour in the clams (for me without shell) and mix well.

  • Pour in the dry white wine and let the alcohol evaporate.

    Now all that’s left is to remove the garlic and add the tomato sauce, seasoning with salt and pepper.

  • Continue cooking for 5/6 minutes, allowing the sauce to thicken a bit.

    Pour in the cooking cream and over low heat, continue cooking to blend the flavors.

  • Bring the pasta to a boil and cook according to package directions.

    Drain al dente and pour into the pan with the seafood sauce.

  • Carefully mix the ingredients, also adding the fresh chopped parsley.

    Plate the dish and serve the pirate style penne creamy first course with clams and parsley!
