PLEUROTUS, POTATO, AND SPINACH TERRINE one-dish meal

The recipe for the pleurotus, potato, and spinach terrine I considered a one-dish meal because I added eggs, making it a complete dish with vegetables and proteins, but … you can skip the eggs to make it an autumn side dish or make it even richer and more flavorful by adding half a block of crumbled feta !

During this season, we find pumpkins and mushrooms at the supermarket as affordable vegetables (except for porcini, haha) that we can prepare in many ways and can enhance sauces for main courses or add flavor to roasts and stews cooked in the pan or in the oven.

  • 8.8 oz Pleurotus mushrooms
  • 1.76 lbs potatoes
  • 1.76 oz red onion
  • 3 eggs
  • to taste spices (I used zaatar and a pinch of turmeric)
  • 3 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper

PREPARATION FOR THE PLEUROTUS, POTATO, AND SPINACH TERRINE one-dish meal

1) This autumn dish is very good, even if it’s silly to say it since I made it myself, it’s truly delicious!

2) It’s very easy to make, so first, I peel the potatoes and cut them into chunks roughly the same size, then place the cubes in a bowl.

3) I clean the pleurotus mushrooms by removing the end of the stem and washing them quickly under running water.

4) I tear the mushrooms into strips with my fingers and add them to the terrine.

5) I pour in the extra virgin olive oil and chosen spices, seasoning with salt and pepper, and mix well with a spoon the vegetables just portioned into small pieces.

6) I pour everything into the terrine and bake at 375°F (190°C) for about 20/25 minutes, checking that they don’t stick, and if necessary, adding a little hot water to the baking pan.

7) After the time has elapsed and once cooked, I add a handful of fresh washed spinach and 2/3 eggs, baking again for about 5/6 minutes.

8) Here is this autumnal simple and genuine one-dish meal ready with proteins and vegetables that we can make even tastier by adding a 125-gram block of Greek feta as soon as we take the baking dish out of the oven.

9) I love these mixes and during this period I need to eat vegetables, and this terrine is delicious!
