Plum Cake with Candied Fruit and Raisins

Ingredients

  • 1.6 cups flour
  • 5.3 oz butter (soft)
  • 3/4 cup sugar
  • 3 eggs
  • 5.3 oz candied fruit and raisins
  • 3 tbsps rum (clear, omit if making for children although it evaporates during baking)
  • 1 tbsp baking powder
  • 1 tsp lemon zest (organic or untreated)

Steps

  • Mix the soft butter with the eggs, then add the sugar, flour, and baking powder.
    Take the raisins and candied fruits, lightly flour them to prevent sinking during baking, and add them to the mixture.

  • Add the grated lemon zest and the liquor, and after buttering and flouring the loaf pan, pour in the batter and bake at a low temperature of 320°F for 40 to 45 minutes.

  • If the surface browns too much, cover the cake with an aluminum foil and continue baking until a skewer comes out perfectly dry.

  • Let the plum cake with candied fruit and raisins cool on a cake rack.
    Dust the cake with powdered sugar and… serve at the table!
