Ingredients
- 1 3/4 cups flour
- 2/3 cup butter (soft)
- 3/4 cup sugar
- 3 eggs
- 5.3 oz candied fruits and raisins
- 3 tbsp rum (light and omit if making for children even though it evaporates during baking)
- 1 tbsp baking powder
- 1 tsp lemon zest (organic or untreated)

Mix the soft butter with the eggs, then add the sugar, flour, and baking powder.
Take the raisins and candied fruits and coat them lightly with flour; this will help them not sink into the batter during baking, then add them to the mixture.Add the grated lemon zest and the liquor, and after greasing and flouring the plum-cake pan, pour in the mixture and bake at a low heat of 320°F for 40/45 minutes.
If the top browns too quickly, shield the cake with a sheet of aluminum foil and continue baking until a skewer comes out perfectly dry.
