This recipe for a main course, or rather a single dish, with polenta and sausages with caramelized onion is a dish that I really love!
It’s a tasty flavorful dish, a robust satisfying dish that with the sweet and sour note of the onion is truly balanced and appetizing!
I used quick-cook polenta flour, white onions, and sausages I had in the fridge, but you can also use red onions, Tropea onions, or local sausages, and the combination will be great in all ways.

- 4 cups polenta, cooked (soft)
- 8 sausages
- 1/4 cup dry white wine
- to taste sage
- to taste rosemary
- to taste extra virgin olive oil
- to taste salt

- 7 oz onions
- 1/4 cup brown sugar
- 1/2 glass white wine vinegar
- to taste salt

FOR THE PREPARATION OF THE POLENTA AND SAUSAGES recipe with caramelized onion
I start by cooking the sausages (mine were skinned and opened sausages) by pricking them and placing them in a saucepan with sage and rosemary, a dash of oil, and salt and pepper.
I let them brown well on all sides then add half a glass of white wine letting it evaporate and continuing to cook for another 20 minutes or so,
Of course, I finished much sooner since they were without skin and cut in half!
Meanwhile, I peel and cut the onions fairly thinly.
I then put them in the pan with vinegar, salt, and brown sugar placing the saucepan over a very low flame and cooking gently with a lid, stirring occasionally.
When the onions start to caramelize I add half a glass of water,
I let it come back to a boil and then add them to the sausages and begin to prepare the plate.
I take a nice ladle of polenta and place it in the center of the serving plate and add the sausages and caramelized onions!
ET VOILA’ the dish is ready and it’s time to serve!
