Poor Man’s Peppers

Here’s a quick way to use two peppers that have been in the fridge for a couple of days for a very simple recipe—the poor man’s peppers, which can be a tasty side dish, a delicious appetizer even cold in summer, and perfect to top a nice slice of Tuscan bread for abruschetta that’s super tasty!

For me, it was a side dish to two grilled chicken slices for a quick and tasty lunch, but off to the kitchen for this super quick recipe!

The recipe for poor man’s peppers typical of Salento is sometimes varied, and we have potatoes and poor man’s peppers, which is always very tasty and delicious even cold in the summer!

This very simple side dish could also be a cold appetizer eaten just like that or added to some golden crostini grilled in the oven for 5 minutes.
It’s important that the poor man’s peppers are cooked yet still crunchy…
