HONEY-GLAZED PORK LOIN RECIPE
After an exciting start with warm temperatures, sometimes almost summery, in Bologna as in other parts of Italy, the cold is back, and instead of thinking about carpaccios and caprese salads, I thought it would be a good idea to make a honey-glazed pork roast today!
The pork loin is a cut from the back of the pig up to the loin and is often used to prepare succulent roasts.
Nothing of the pork is wasted, and there are many pork cuts used widely in many cuisines and regional preparations, and this dish has a very inviting taste, excellent with potatoes, a classic for a family meal!

HONEY-GLAZED PORK LOIN

Ingredients for HONEY-GLAZED PORK LOIN
- 2.2 lbs Pork Loin
- 4.23 oz Acacia Honey
- 8 slices pancetta
- to taste Cloves
- to taste garlic cloves
- to taste rosemary
- to taste salt and pepper
- to taste vegetable broth
- to taste dry white wine

Preparation for HONEY-GLAZED PORK LOIN
First, we need to lard the pork by making some holes on the surface of the loin and inserting garlic cloves, rosemary needles, and cloves to taste.
Once this is done, we cover the piece of meat (we bard it) with sliced pancetta and then tie it all up to ensure it stays together while cooking.
Prepare the broth and set aside: you will need about 2/3 ladles. Brown the pork loin in a pan without adding fats by turning it on all sides
Pour the wine and let it evaporate completely. Season with salt and pepper.
Transfer the meat to a baking pan and set it to cook, basting it gradually with a mixture of acacia honey mixed with a couple of ladles of broth.
Cook at a low temperature at around 375°F for about 40 minutes. Once cooked, serve the honey-glazed pork loin with roasted potatoes or a mashed potato dish or … let your imagination and tastes guide you! Enjoy your meal!!!
