- 14.1 oz tomato puree
- to taste chili powder
- 1/2 cup dry white wine
- to taste extra virgin olive oil

PREPARATION FOR PORK RIBS WITH CHICKPEAS Tasty Rustic Dish
Heat a little EVO oil in a pan or casserole, then add the ribs and let them brown, turning occasionally for even cooking.
Pour the white wine over the meat and let the alcohol evaporate over medium-high heat, then salt, pepper, and season with chili powder.
Add the pork ribs to the tomato, lower the heat, and continue cooking for about 40 minutes.
Add the boiled chickpeas, adjust the salt, and continue cooking for another 25/30 minutes. If the preparation dries too much, add a ladle of water.
It is an economical and tasty dish that I can serve with some toasted bread to make the famous ‘scarpetta’, and boiled or roasted potatoes.
