PORK ROAST WITH TOMATOES AND POLENTA tasty recipe

Today at Pam I found a nice piece of pork neck at a great, deeply discounted price, and here I am making the pork roast with tomatoes and polenta.
Instead of the usual potatoes, I added some cherry tomatoes (which in the fridge were starting to look a bit unsightly, to be honest), both cherry and Piccadilly, but even some nice ripe ‘normal’ tomatoes will be perfect.
I also had a craving for polenta, so I made it too… the instant kind, of course!
It’s the first time I’ve used this part of the pork and I must say that the meat was tender as butter… like tuna you can cut with a breadstick, ha ha!

PORK ROAST WITH TOMATOES AND POLENTA

Ingredients

  • 2.2 lbs pork neck
  • 20 cherry tomatoes
  • 5 leaves sage
  • 3 sprigs rosemary
  • 1 glass vegetable broth
  • 1 1/2 glass dry white wine
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste instant polenta

Preparation of the Pork Roast Recipe with Tomatoes and Polenta

  •  In a pan with the oil, place the pork meat and brown it well on all sides to seal in the meat juices.

  • Pour the wine and let it evaporate, then add the cherry tomatoes well washed and quartered, the aromatic herbs, and transfer the cooking to an oven dish, leaving everything to cook for a long time at 356/392°F (about an hour and a half, I would say).

    Always check the gravy and if necessary add the broth.

  • Once the roast is cooked, if the gravy is not thick enough, dissolve a teaspoon of potato starch in a small coffee cup with a little water and add it to the sauce before serving at the table, mixing everything well.

  • Also make some instant polenta leaving it runny and when everything is ready, plate your dish.

    It was a very economical and simple dish but much appreciated by my guests…
