This chicken and potato recipe was created to use up leftover food and is very simple and tasty!
I believe it’s common for everyone to find leftover roast chicken or boiled in the fridge and try to invent a tasty way to bring something easy, homemade, and delicious to the table.
Potatoes then become the soft and enveloping base that holds seasoned meat with tomato sauce, and after a quick bake in the oven (everything is more or less already cooked, right?), the casserole is ready to be served at the table.
With the cold of autumn slowly approaching, it is a unique dish, a comfort food, and also a smart idea that saves us time and avoids waste, yet still brings a rich and tasty dish to the table.
I personally find it perfect for dinner, to be served in generous slices and to be reused when a bit of chicken is leftover!
This is one of those perfect recipes to use up leftovers in your fridge.
Possible Variations
You can also use pork or beef, and you can replace the meat with tuna or mixed sautéed vegetables. You can use your favorite sauce to season the meat. This potato and cooked meat casserole will be delicious even if we use béchamel instead of tomato sauce.

Always ON THE TOPIC of casseroles/savory pies, here are some ideas just below:
- Difficulty: Easy
- Cost: Medium
- Rest time: 5 Minutes
- Preparation time: 15 Minutes
- Portions: 6 People
- Cooking methods: Oven
- Cuisine: Italian
- Seasonality: All Seasons
Ingredients
- 2.6 lbs potatoes, with skin, cooked, boiled
- 12.3 oz chicken, breast, cooked, in pan
- 7.1 oz tomato sauce (Mutti datterini for me)
- 5.3 oz cheese (sliced like mozzarella, leerdammer or …)
- 2.8 tbsp butter
- 1.3 cups Grana Padano, grated
- 1.8 oz diced speck (or bacon or pancetta as you like)
- to taste salt
- to taste pepper
- to taste nutmeg
Tools
- Baking Dishes
- Potato Mashers
Steps
Let’s start! Peel the previously cooked potatoes, then mash them with the potato masher or a fork and season with butter, pepper, salt, and grated nutmeg.
Chop the meat into pieces with a knife: I didn’t choose the blender because I didn’t want to end up with a mushy mess 😉.
Now let’s assemble the CHICKEN and potato casserole, so…
At the bottom of the baking dish, I pour a little EVO oil, then make a layer of potatoes, add the chicken meat seasoned with tomato sauce.
Then I add a few cheese slices, make another layer of potatoes, then more cheese.
More potatoes, then grated cheese and diced speck on top.
Now I just need to place the baking dish in a preheated oven at 392°F (200°C) for about 15-20 minutes or until the potato and chicken pie is nice and golden on top.
Let it cool slightly and off to the table!!!!!!!!!!!!
Try it too and let me know what you think!
Enjoy your meal! Annalisa
If you want to cook the potatoes before turning off the heat, stick a skewer inside to ensure they are cooked and tender!
