Today, Sunday, after a crazy night with a downpour that didn’t bode well, a slight sun appeared between the clouds that persist in the sky in Bologna, and even hopping with my injured foot, I thought I can cook on one leg too and here is the potato, bacon, and ricotta terrine!
These recipes are ideal as a ONE-DISH MEAL in my opinion you just need to pair it with a green salad, two stuffed pepper rolls, a nice piece of parmesan or another cheese, and dinner is guaranteed!

INGREDIENTS FOR POTATO, BACON, AND RICOTTA TERRINE
- 1.76 lbs potatoes
- 2.8 oz bacon (smoked bacon for me)
- 8.8 oz cow's milk ricotta
- 1/2 glass milk
- 2 tbsp Parmesan cheese (grated)
- 1 shallot (chopped)
- as needed butter (or extra virgin olive oil for the baking dish)
- as needed chives (chopped)

- Cutting board
- High-sided saucepan
- Baking dish
- Colander / Strainer
- Pan
FOR THE PREPARATION OF THE POTATO, BACON, AND RICOTTA TERRINE RECIPE
Peel, wash and thinly slice the potatoes.
I usually use the mandoline but today I used a knife. It’s important that they are the same thin thickness then… do what is most convenient for you and based on your home equipment!
Boil them for 5 minutes or a little more in salted boiling water and carefully drain them, letting them cool on a surface, maybe the cutting board.
In a pan, add a drizzle of extra virgin olive oil and add the peeled and finely chopped shallot.
When it’s golden, add the smoked bacon cubes and over medium heat, let everything brown.
At the end of cooking, turn off the heat and add the cow’s milk ricotta and the milk, mixing the mixture well.
Also add a fine and abundant chop of chives.
Lightly grease the baking dish and lay down a first layer of boiled sliced potatoes.
Spread a part of the bacon and ricotta mix on top, then add the remaining potatoes and finish with the remaining cream.
Sprinkle with grated Parmesan and bake at 375°F for about 20 minutes.
Then switch to grill mode and let the potato, bacon, and ricotta flan brown for 5 minutes.
Once cooking is complete, let it cool for 5 minutes then serve this delicious potato terrine to our guests!
