POTATO PANCAKES

These potato pancakes with a nice chop of parsley and spring onion are very tender and tasty and also very easy to make!

I used red spring onion, but the classic one will be fine too, and parsley, but in my opinion, after tasting them, I think the potato cake mix is even tastier with a chop of chives…I should try it again but I would say I’m right!

To be honest, potatoes have a basic taste, so we could also use a mix of aromatic herbs like rosemary and sage or chives and parsley!

If you prepare the recipe from the beginning, cooking the potatoes, put them in cold water like every tuber and check the cooking after about 25 minutes (but it depends on their size) by piercing them* with a toothpick that should go through** gently without effort. (Forgive me, these words come out because I read a lot of thrillers and watch particularly gruesome series in this period ehmehm)

  • 1.1 lbs potatoes, peeled, cooked, boiled
  • 2 eggs
  • 1/3 cup cornstarch
  • 1/4 cup red spring onion (fresh and chopped)

FOR THE PREPARATION OF THE POTATO PANCAKES

  • For this easy recipe to cook a tender and tasty side dish for meat and fish

    I put the boiled potatoes in a bowl and mash them while still hot with the potato masher.

    Then I add salt and pepper, chopped parsley, and very finely chopped spring onion and mix well in the mixture.

  • Now I add cornstarch and eggs to everything and mix well this dough, which should not stick to the fingers, so if it still does, I add a little breadcrumbs or more cornstarch.

    With hands protected by single-use gloves, I make thick patties about 1/2 inch thick I would say!

  • In a pan or in the wok I put some vegetable oil (peanut oil is the one with the highest smoke point) and when it reaches 340°F, I cook the potato and red spring onion pancakes with the lid on and turning them when one side is nicely golden!

  • Once cooked on both sides, I drain them on kitchen paper and serve immediately at the table…
