Ingredients for POTATO PIZZA WITH ZUCCHINI AND PROSCIUTTO

  • 1.32 lbs Potatoes
  • 1 Egg (medium)
  • 2.82 oz Parmigiano Reggiano DOP (grated)
  • 1 Mozzarella
  • 1 Zucchini
  • 1 Tomato
  • to taste Salt
  • to taste Pepper
  • to taste Extra virgin olive oil (to grease the pan)

FOR THE PREPARATION OF THE POTATO PIZZA WITH ZUCCHINI AND PROSCIUTTO RECIPE

  • First, boil the potatoes starting from cold salted water.

    Once cooked, mash them using a potato masher collecting the puree in a bowl.

    Add the egg and the grated cheese to the mixture, stirring and mixing well.

  • With this mixture, line a 22 cm baking pan (8.5 inches with a removable bottom) that is just greased, spreading it evenly.

  • While the potatoes were boiling, we trimmed our zucchini and then sliced it very thinly.

    In a pan with a drizzle of oil, we then sautéed the vegetable for 3/4 minutes over high heat, seasoning with salt and pepper.

  • In the same pan, we do the same thing with the wash and cut tomato into wedges, always adjusting the seasoning to taste.

  • With these cooked and crispy vegetables, decorate and garnish the potato pizza already placed in the pan.

    Also add the mozzarella in cubes and bake at 356°F for about 30 minutes.

  • Once cooked, remove the potato pizza with zucchini from the pan and place the prosciutto slices on top, serving immediately at the table.

    A valid alternative for a family and homemade meal…
