I close the year 2020 with once again — yes, another — a RECIPE FOR APPETIZERS, more precisely these puff pastry tartlets stuffed and super easy, another tasty way to use ready-made puff pastry or homemade pastry.
I don’t want to comment on 2020; I’ll just say it was extremely heavy because … well I think it was very hard for everyone so I’ll leave it at that!

I often use puff pastry which pairs wonderfully with both sweet recipes and savory recipes, and these PUFF TARTLETS filled are a simple vessel for dips, savory creams and small salads with boiled or grilled vegetables, small legumes but also pieces of leftover pasta …
In short, there’s a wealth of choices for greedily filling these small crunchy containers, very easy puff pastry tartlets to fill deliciously!

For this little recipe I made 5 different fillings, which I list as ideas — you can vary them according to your tastes.
Today’s savory tartlet fillings that I made are:
– ready-made Russian salad or
here’s my recipe;
– datterini cherry tomatoes with cubes of feta, a little oil and a pinch of oregano;
– Taggiasca olive mousse;
– creamy cheese with a rosette of smoked salmon;
– boiled shrimp with mayonnaise.

- 1 package puff pastry (for 16 tartlets)
- as needed datterini cherry tomatoes
- as needed feta
- as needed extra virgin olive oil
- as needed dried oregano
- as needed salt
- as needed shrimp (fresh or frozen)
- as needed mayonnaise

- as needed Taggiasca olives (the ones labeled ALDI are great for me!)

FOR THE PREPARATION OF THE RECIPE PUFF PASTRY TARTLETS STUFFED AND SUPER EASY
Unroll the package of ready-made puff pastry on a work surface—my countertop.
With a knife or a fluted pastry wheel I mark 16 rectangles on the dough by first halving each side and then halving again.
I place these pieces of puff pastry into each cavity of the muffin tin: I have two small tins and prepared both.
On top of each piece of puff pastry I put a square of parchment paper and then fill the cavity with dry beans or ceramic baking beads used for blind baking… In short, I blind-bake the puff pastry tartlets!
I bake the trays at 392°F for about 15 minutes or according to your oven’s characteristics.
Remove the dry beans and let the puff pastry finger foods cool completely.
Now I prepare the various fillings which are:
– wash and dice the datterini, dice the feta as well and mix in a bowl, adding a drizzle of EVO oil and seasoning with salt;
– mix the cooked shrimp with a little mayonnaise and salt, adding a pinch of chopped chives;
– blend together in a food processor cream cheese and Taggiasca olives and adjust seasoning;
– soften the cream cheese by mixing vigorously, add a bit of chopped parsley and cut the smoked salmon into strips, place in a piping bag and fill and decorate my ready-made puff pastry tartlet;
– prepare the Russian salad by boiling the vegetables separately or buying it ready-made from a deli, then fill the tartlet.
