Puff Pastry with Jerusalem Artichokes

Today I cooked the puff pastry with Jerusalem artichokes, a quick and easy savory pie that’s very tasty!

The Jerusalem artichoke  is also called German turnip or sunchoke and is considered a dietary tuber suitable even for those with diabetes.
The Jerusalem artichoke does not contain cholesterol and with 2.7 grams of fiber, it aids good intestinal function and is low in calories with 73 calories per 100 grams of product.

Among other properties, the Jerusalem artichoke is detoxifying, gluten-free, boosts the immune system, speeds up metabolism, and fights fatigue.
The Jerusalem artichoke can also be eaten raw; it somewhat reminds me of the taste of artichokes, the skin is edible so keeping or removing it will depend on the type of preparation you intend to make.

JERUSALEM ARTICHOKES contain a substance called inulin which keeps blood glucose levels stable, making them suitable for diabetics and those on a weight-loss diet.

If you intend to keep it, wash the tuber under running water and remove any soil and root residues with a small brush.

Puff Pastry with Jerusalem Artichokes

Ingredients for PUFF PASTRY WITH JERUSALEM ARTICHOKES

  • 1 roll ready-made puff pastry
  • 12.35 oz Jerusalem artichokes
  • 1 mozzarella
  • 1 egg yolk (optional and only before baking)
  • leaves sage
  • to taste salt and pepper

Tools for PUFF PASTRY WITH JERUSALEM ARTICHOKES

  • Knife
  • Mandolin
  • Mixing Bowl

Preparation

  • Unroll the puff pastry and, keeping the parchment paper, place it in the mold: mine is 8.66 inches in diameter.

    Clean or peel the Jerusalem artichokes perfectly with a LOT of patience and slice them thinly with a mandolin (or a sharp knife).

  • Finely chop the mozzarella and drain it from the liquid using a colander.

    Take the mold with the puff pastry and arrange the Jerusalem artichoke slices trying to make an even layer over the entire surface.

    Now sprinkle the diced mozzarella over the puff pastry with Jerusalem artichokes and season with salt and pepper.

  • With the leftover puff pastry make a lattice as for pies and lightly brush the pastry with the beaten egg yolk.

    Bake in a preheated oven at 375°/400° F until golden and cooked through.

  • It will take about 25/30 minutes, but as always, it depends on your oven!

    Once cooked, add a few sage leaves and bring directly to the table to enjoy this surprising puff pastry with Jerusalem artichokes!!!

  • THIS SAVORY PIE IS DEFINITELY AMONG THE BEST I’VE EVER MADE, WITH A LIGHT TASTE AND A VERY PLEASANT TEXTURE BECAUSE THE JERUSALEM ARTICHOKE SLICES, EVEN IF COOKED, RETAIN THEIR THICKNESS, YOU CAN FEEL THE SLICE BESIDES SEEING IT, AND EACH BITE IS TRULY DELICIOUS…..HIGHLY RECOMMENDED!!!!!
