Puff Pastry with Sunchokes

Today I cooked the puff pastry with sunchokes, a quick and easy savory tart that is very appetizing!

The sunchoke  is also called Jerusalem artichoke and is considered a dietary tuber suitable even for people with diabetes.
The sunchoke contains no cholesterol and, with 2.7 grams of fiber, contributes to proper intestinal function and is also low in calories, having 73 calories per 100 grams of product.

Among other properties the sunchoke is detoxifying, gluten-free, boosts the immune system, speeds up metabolism and fights fatigue.
The sunchoke can also be eaten raw; its flavor slightly resembles (to me … barely) that of artichoke. The skin is edible, so whether to keep it or remove it will depend only on the type of preparation you intend to cook.

SUNCHOKES contain a substance called inulin which helps maintain steady blood glucose levels and therefore they are suitable for diabetics and for those following a weight-loss diet.

If you intend to keep the skin, wash the tuber under running water and remove any dirt and roots with a small brush.

Putting aside all the information and getting straight to the recipe, using and tasting the sunchoke was a revelation for me and I will certainly prepare other recipes. SUNCHOKE PUFF PASTRY

Jerusalem Artichoke Puff Pastry Pie

Ingredients RECIPE PUFF PASTRY WITH SUNCHOKES

  • 1 sheet ready-made puff pastry
  • 12 oz sunchokes (Jerusalem artichokes)
  • 1 mozzarella (ball)
  • 1 egg yolk (optional and only before baking)
  • leaves sage
  • to taste salt and pepper

Tools RECIPE PUFF PASTRY WITH SUNCHOKES

  • Knife
  • Mandoline
  • Bowl

Preparation

  • Unroll the puff pastry and, keeping the parchment paper, place it in the pan: mine is 8 2/3 in in diameter.

    Clean or rather peel the sunchokes thoroughly — arm yourself with GREAT patience — and using the mandoline (or a sharp knife) slice them very thinly.

  • Finely chop the mozzarella as well and drain it from the liquid in a colander.

    Take the pan with the puff pastry and arrange the sunchoke slices on it, trying to make an even layer over the entire surface.

    Now scatter the diced mozzarella over the puff pastry with sunchokes and season with salt and pepper.

  • With the leftover puff pastry make a lattice as you would for tarts and brush the pastry lightly with the beaten egg yolk.

    Bake in a preheated oven at 374°/392° F until golden and cooked through the puff pastry with sunchokes.

  • It will take about 25/30 minutes, but as always it will depend on your oven!

    Once cooked, add a few sage leaves and serve immediately to enjoy this surprising puff pastry with sunchokes!!!

  • THIS SAVORY TART IS DEFINITELY ONE OF THE BEST I’VE EVER MADE, WITH A LIGHT FLAVOR AND A VERY PLEASANT TEXTURE BECAUSE THE SUNCHOKE SLICES, WHILE COOKED, RETAIN THEIR THICKNESS — YOU CAN SEE AND TASTE THE SLICE — AND EVERY BITE IS REALLY DELICIOUS…..HIGHLY RECOMMENDED!!!!!
