Unexpected guests for dinner and… what do we eat??? For my friends who love vegetables, I thought of preparing a quiche with asparagus and peas to add some flavor, I also added diced bacon, you know, the one for carbonara that you can also find smoked!

The other possible variations for this quiche in my opinion are cooked ham instead of bacon, pecorino instead of parmigiano reggiano, and for the base, if you can’t find phyllo you can use brisé or puff pastry… the result will still be very tasty and appetizing!

Ingredients for QUICHE Recipe with Asparagus and Peas
- 1 1/4 cups Milk
- 3 tbsps All-purpose flour
- 2 tbsps Butter
- 3 medium eggs
- 1/2 cup grated Parmigiano Reggiano cheese
- 1/3 cup boiled peas
- 5 oz boiled asparagus
- 2 oz diced bacon
- 1 package phyllo dough
- 2 pinches Fine salt
- 2 pinches Pepper
- 1 pinch Nutmeg
- 3 tbsps Extra Virgin Olive Oil

Preparation of the QUICHE Recipe with Asparagus, Peas, and Bacon
• Prepare the béchamel by putting the butter in a casserole.
Once melted, add the flour and toast it for a few minutes.
Now add the milk and whisk constantly by hand over moderate heat until the mixture thickens.
• Off the heat, add the beaten eggs and grated Parmigiano Reggiano. Adjust with salt and pepper, and if you like, a hint of nutmeg. Now add the vegetables and bacon.
Unroll the phyllo dough package and carefully place it on the pan (8.7-9.4 inches) lined with parchment paper, layering the phyllo sheets by brushing each sheet with oil before adding the next.
I personally used 5 of the 7 sheets of phyllo dough available in the package.
• Now pour the béchamel mixture, asparagus, peas, Parmesan, and eggs.
Bake in a preheated oven at 356°F for about 35-40 minutes depending on your oven’s characteristics.
