A new savory pie, a quiche with bacon, spinach, and cherry tomatoes for a meatless meal and also for a savory snack or appetizer if served in small slices or squares.

I added at the pie’s bottom a nice diced smoked bacon that I browned in a pan without adding any fat.

This step, although it takes little time, can be skipped by adding the bacon as is, which will cook with the rest of the ingredients.

Ingredients for QUICHE WITH BACON, SPINACH, AND CHERRY TOMATOES

  • 1 package puff pastry (or shortcrust)
  • 200 g cherry tomatoes
  • 3 eggs
  • 250 g cooking cream
  • 100 ml milk
  • 100 g smoked bacon
  • 2 tablespoons pine nuts
  • 3 tablespoons grated parmesan cheese
  • to taste frozen spinach (4/5 frozen cubes)
  • to taste salt
  • to taste pepper

PREPARATION STEPS FOR QUICHE WITH BACON, SPINACH, AND CHERRY TOMATOES

  • Preheat the oven to 356°F and start preparing the filling cream for the homemade savory pie with bacon, spinach, and cherry tomatoes.

    Unroll the chosen pastry and place it in an approximately 9.5 inches pan, and with a fork, make many holes in the base.

  • Boil the spinach in a little water and brown the smoked bacon without any fat.

  • Place the smoked bacon sticks on the bottom (but also classic) and break the eggs in a separate bowl.

  • Add the cooking cream, milk, grated cheese, and season with salt and pepper.

  • Wash and dry the cherry tomatoes and with a sharp knife cut them in half arranging them in a radial pattern in the cream.

  • We already boiled the few frozen spinach cubes in very little water, and by draining them, we try to eliminate as much formed water as possible.

  • Place them also on the savory pie with bacon and cherry tomatoes, then finish by sprinkling the pine nuts here and there.

  • Now, just bake the easy and tasty quiche, letting it cook for about 40/45 minutes or depending on your appliance’s characteristics.

  • Once the savory pie with spinach is cooked and the edges are puffed and golden, turn off the heat and let it cool.

    Serve at the table accompanied by a dish with mixed cheeses, boiled eggs, grilled mushrooms and more!
