Who follows me on the blog knows that I have a love for appetizers . It’s a course that, along with desserts, I enjoy very much because it’s versatile; you can use many ingredients, both raw and cooked, and it’s a pleasure to make and taste them.

Ingredients QUICK AND TASTY MIXED APPETIZERS

  • 1 slice white sandwich bread (crust removed)
  • 80 g smoked salmon
  • 2 tbsps cream cheese
  • 1 slice white sandwich bread (crust removed)
  • 80 g tuna in oil
  • 2 tbsps mayonnaise
  • 1 tsp capers
  • 2 anchovies in oil
  • q.b. walnut halves
  • 1 tbsp Mascarpone
  • 1 tbsp gorgonzola
  • 2 tbsps ricotta cheese
  • 2 tbsps Parmigiano Reggiano
  • q.b. ready puff pastry
  • q.b. cream cheese
  • q.b. black olives
  • q.b. chicken sausages
  • q.b. ready puff pastry
  • 1 pink grapefruit
  • 10 Fontina cheese cubes

Preparation QUICK AND TASTY MIXED APPETIZERS

  • 1.FOR THE SMOKED SALMON ROLLS spread the sandwich bread with cream cheese, add salmon slices and tightly roll the bread into a pinwheel shape. Wrap in plastic wrap and refrigerate until it’s time to slice into rounds.

    2.FOR THE TUNA PINWHEELS blend all the ingredients except the bread in a mixer, season with salt and pepper, spread this savory mousse on the bread, roll like the salmon rolls, and let the sandwich rest.

    3.FOR THE STUFFED WALNUTS simply mix mascarpone with gorgonzola and place a small ball between two walnut halves.

    4.FOR THE RICOTTA BALLS mix ricotta and grated Parmigiano, then form small balls with your palms… perhaps using food-grade gloves!

    5.FOR THE PUFF PASTRY CORNETS use cannoli molds to make small cones after cutting strips about 3/4 inch wide, wrapping them slightly overlapping as you roll them on the steel cone. Brush with a bit of water or lightly beaten yolk and bake at 375°F until golden.

    6.FOR THE SAUSAGE AND PUFF PASTRY always cut strips about 3/4 inch wide with the puff pastry, wrap them around small sausages, and again bake at 375°F for a few minutes.

    7.FOR THE PINK GRAPEFRUIT cut cheese into cubes and skewer them on the halved grapefruit.
