Ingredients RECIPES QUICK AND TASTY MIXED APPETIZERS

  • 1 slice sandwich bread (without crust)
  • 3 oz smoked salmon
  • 2 tbsp cream cheese
  • 1 slice sandwich bread (without crust)
  • 3 oz tuna in oil
  • 2 tbsp mayonnaise
  • 1 tsp capers
  • 2 anchovies in oil
  • to taste walnut halves
  • 1 tbsp mascarpone
  • 1 tbsp gorgonzola
  • 2 tbsp cow's ricotta
  • 2 tbsp Parmigiano Reggiano
  • as needed ready-made puff pastry
  • as needed cream cheese
  • as needed black olives
  • as needed chicken hot dogs
  • as needed ready-made puff pastry
  • 1 pink grapefruit
  • 10 fontina cubes

Preparation RECIPES QUICK AND TASTY MIXED APPETIZERS

  • 1.FOR THE SALMON ROLLS I spread the sandwich bread flat, spread it with cream cheese, add the slices of salmon and roll the bread tightly into a spiral. Wrap it in plastic wrap and place it in the refrigerator until ready to slice into rounds.

    2.FOR THE TUNA ROUNDS I blend all the ingredients except the bread in a food processor; after seasoning with salt and pepper, I spread this savory mousse for quick appetizers onto the bread and roll it up as for the salmon rolls, then let the bread roll rest in the refrigerator.

    3.FOR THE STUFFED WALNUTS simply mix the mascarpone with the gorgonzola and place a small ball between two walnut halves — very simple!

    4.FOR THE RICOTTA BALLS mix ricotta and grated Parmigiano and then form small balls between the palms of your hands …you might want to use a food-safe glove!

    5.FOR THE PUFF PASTRY CRESCENTS using the cones for Sicilian cannoli I make small crescents after cutting the pastry into strips of about 3/4 in and wrapping them, slightly overlapping as I roll them onto the metal cone. Brush, if desired, with a little water or lightly beaten egg yolk and bake at 374°F until golden.

    6.FOR THE SAUSAGE AND PUFF PASTRY BITES again, after cutting the puff pastry into strips of about 3/4 in, I wrap them around the smaller sausages I prefer and bake again at 374°F for a few minutes.

    7.FOR THE PINK GRAPEFRUIT cut the cheese into cubes and skewer them into the grapefruit cut in half.
