Ingredients QUICK AND TASTY MIXED APPETIZERS
- 1 slice sandwich bread (crustless)
- 80 g smoked salmon
- 2 tablespoons cream cheese
- 1 slice sandwich bread (crustless)
- 80 g canned tuna
- 2 tablespoons mayonnaise
- 1 teaspoon capers
- 2 anchovies in oil
- as needed walnut halves
- 1 tablespoon Mascarpone
- 1 tablespoon gorgonzola
- 2 tablespoons ricotta cheese
- 2 tablespoons Parmigiano Reggiano
- as needed ready puff pastry
- as needed cream cheese
- as needed black olives
- as needed chicken sausages
- as needed ready puff pastry
- 1 pink grapefruit
- 10 cubes of fontina cheese

Preparation QUICK AND TASTY MIXED APPETIZERS
1.FOR THE SALMON ROLLS I spread the sandwich bread with cream cheese, add the salmon slices, and tightly roll the bread into a spiral, which is then wrapped in cling film and refrigerated until it’s time to cut into slices.
2.FOR THE TUNA SWIRLS I blend all the ingredients, except the bread, in a mixer, season with salt and pepper, spread this savory mousse for quick appetizers on the bread, and roll it like the salmon rolls, then let the sandwich rest.
3.FOR THE STUFFED WALNUTS just mix the mascarpone with the gorgonzola and place a small ball between two walnut halves, proceeding very simply!
4.FOR THE RICOTTA BALLS I mix ricotta and grated Parmigiano and then make small balls between the palms of my hands… maybe using a special food glove!
5.FOR THE PUFF PASTRY HORNS using the molds for Sicilian cannoli, I make small horns after cutting the pastry into strips about an inch wide and wrapping them slightly overlapping around the steel cone. I brush with a bit of water or lightly beaten yolk and bake at 375°F until golden.
6.FOR THE SAUSAGES AND PUFF PASTRY always after making strips with the puff pastry, about an inch wide, I wrap them around the sausages, the smallest ones for me, and bake again at 375°F for a few minutes.
7.FOR THE PINK GRAPEFRUIT I cut the cheese into cubes and skewer them on the halved grapefruit.
