I put a slice of cooked ham, a slice of scamorza, and a little chopped parsley in the slices of turkey breast, but if you want to vary… you can add a slice of hard-boiled egg, a sage leaf, and a stick of mortadella because this filling is also delicious!

Ingredients for QUICK AND TASTY ROLL-UPS RECIPE
- 4 slices turkey breast
- 4 slices cooked ham
- 4 slices scamorza (or provola)
- 4 tablespoons frozen soffritto (mix of carrots, celery, and onion)
- 1 tablespoon tomato paste (heaped)
- 2 tablespoons flour
- as needed water
- 1 slice butter (a small piece, don't overdo it!)
- as needed salt
- as needed pepper
- as needed extra virgin olive oil

FOR THE PREPARATION OF THE QUICK AND TASTY ROLL-UPS RECIPE
To prepare these quick and succulent roll-ups with white meat, first I flatten the turkey breast slices.
I place each slice of meat between two sheets of parchment paper and use the meat tenderizer to pound them from the center outward, thinning them slightly, hopefully evenly.
I cover each slice with cooked ham, the slice of scamorza, and add a few washed parsley leaves.
I roll up the meat into a roll-up securing it with toothpicks.
I quickly coat the turkey roll-ups in flour placed in a small plate.
In a pan, I put some extra virgin olive oil and butter, and when they are melted, I add the frozen soffritto browning and sautéing it.
I put the roll-ups in the pan and at high heat, I seal the meat on all sides.
Now I add the tomato paste and a glass of water.
I mix the seasoning of the quick and tasty roll-ups well and adjust the salt and pepper.
I put a lid on and let it cook for about 15 minutes, or depending on… the thickness of the meat, paying attention that the sauce doesn’t reduce too much!
