Quick Lemon Layer Cake an easy and simple no-bake layered cake with lemon flavor, perfect for the summer that has suddenly arrived, and today in Bologna it feels like Ferragosto!
Layer cake simply means a layered cake, layers which in this recipe for a quick no-bake dessert are made of round simple and crumbly butter cookies, but we can make a layered dessert using clearly a baked dessert like sponge cake, a margherita cake, a pound cake, or the grandmother’s cake recipe that you love so much!
The layer cake, the sweet sandwich cake, can be filled with creams, jams, or other types of glaze or preserve of your choice, but this one with cookies is a delicious and super quick layer cake!

Ingredients for the Quick Lemon Layer Cake Recipe
- 2 cups cookies (ROUND COOKIES FOR ME AND FOR 8 CAKE LAYERS)
- 1 cup fresh whipping cream
- 1 cup Greek yogurt (creamy white, for me 5% fat)
- 6 oz fresh spreadable cheese
- 3.5 oz lemon marmalade
- 1.4 oz powdered sugar
- as needed candied lemon (a few slices for decoration)
- as needed thyme (better if lemon thyme but anyway it's only for decoration!)

For this dessert I used a cake stand
but clearly any serving plate would be enough, however, over these blogging years, I’ve acquired so many kitchen utensils that I could open a store!

1) I start by preparing the cream, so in the bowl of the stand mixer or in a mixing bowl, I place the fresh cream and begin to whip it. When it’s nearly ready, I add yogurt, spreadable cheese, and powdered sugar.
2) Mix well to get a soft cream to which I then add the lemon marmalade, blending for a minute still with the beaters, and I can start assembling the quick lemon layer cake.
3) I made 8 layers with 7 round butter cookies, so I place 8 cookies at the bottom of the plate, forming a circle;
4) Spread a little bit of delicious white cream and continue layering until finishing with the white cream of whipped cream, yogurt, and creamy cheese.
5) I chose to decorate the quick lemon-flavored layered cake with candied lemon wedges that I tried to make myself by placing 3/4 lemon slices in sugar and water syrup (sugar double the weight of water) and letting them cook for about ten minutes.
6) I leave the candied slices on a sheet of parchment paper to dry and then use them to decorate the lemon-flavored layered dessert with simple butter cookies.
7) I looked for lemon thyme but wasn’t lucky, so for decorative use only, I placed a few small sprigs of thyme and put the quick lemon layer cake dessert in the refrigerator for at least 1 hour.
8) Then I bring it to the table and… enjoy your meal!

1) We can make the white cream filling also without flavors, changing the ingredients and adding condensed milk or mascarpone.
