Quick Lemon Layer Cake a no-bake layered cake easy and simple to make with lemon flavor, perfect for the summer that has suddenly arrived, and today in Bologna it feels like Ferragosto!
Layer cake simply means layered cake, layers that in this recipe for a quick no-bake dessert are made with simple and crumbly round shortbread cookies, but you can make a layered dessert using a baked cake like sponge cake, like a margherita cake, a four-quarters batter, or the grandma’s cake recipe that you love so much!
The layered cake, the sweet sandwich cake, can be filled with creams, jams, or other types of icing or preserve as desired, but this with cookies is a delicious and super quick layer cake!

Ingredients for Quick Lemon Layer Cake Recipe
- 2 cups cookies (ROUND SHORTBREAD FOR ME AND FOR 8 CAKE LAYERS)
- 1 cup heavy cream
- 1 cup Greek yogurt (creamy white for me at 5% fat)
- 6 oz cream cheese
- 3.5 oz lemon jam
- 1/3 cup powdered sugar
- as needed candied lemon (a few slices for decoration)
- as needed thyme (preferably lemon thyme, but it's only for decoration!)

For this dessert, I used a cake stand
but clearly any serving plate will suffice, but over the years of blogging, I have so many kitchenware accessories that I could open a store!

1) Start by preparing the cream, then in the bowl of the stand mixer or in a bowl, put the heavy cream and start whipping it, and when it is almost ready, add the yogurt, cream cheese, and powdered sugar.
2) Mix well to obtain a soft cream, to which you then add the lemon jam. Mix for another minute with the whisks, and you can start assembling the quick lemon layer cake.
3) I made 8 layers of 7 round shortbread cookies, so I place 8 cookies on the bottom of the plate, forming a circle;
4) Spread a bit of the delicious white cream and continue making layers until finishing with the creamy white yogurt and cream cheese.
5) I chose to decorate the quick lemon-flavored layered cake with slices of candied lemon that I tried to make by putting 3/4 slices of lemon in syrup made of water and sugar (sugar twice the weight of the water) and letting them cook for about ten minutes.
6) Let the candied slices dry on a sheet of parchment paper, and then use them to decorate the lemon-flavored layered dessert with simple butter shortbread.
7) I looked for lemon thyme but wasn’t lucky, so just for aesthetic purposes, I placed a few small sprigs of thyme and put the quick lemon layer cake in the fridge for at least 1 hour.
8) Then bring it to the table and … enjoy!
