Another pseudo Christmas-themed recipe, this quick mini pizza tree with ready-made puff pastry and very little else.
With one roll of packaged dough you can make about 15 mini pizzas in total, but I wanted to arrange them on a small platter. With the leftovers, I made spirals that you will see in another holiday-themed recipe.
After cutting the triangles with a cookie cutter I brushed them with a bit of beaten egg and baked for a few minutes.
In the meantime, I thought about the filling that you can make in many ways, like with chopped cold cuts, small cubes of Parmesan or raspadura, sliced mozzarella ovoline, tuna chunks in oil or natural, seasoning everything with a pinch of dried oregano, some chopped fresh basil, a little chili if you prefer them spicy.
In short, my mini pizzas are made with ingredients I had in the kitchen because I decided to prepare them in a second and go!
If we prefer, we can also make these triangles with flatbreads and after making them a little golden, I fill them to my personal taste.
BUT BE CAREFUL… if you prepare the mini pizza tree with puff pastry they remain tasty for a few hours, but if you make the mini pizzas with toasted flatbread be careful not to end up with slightly too crunchy chips if we eat them after a few hours. They’re good anyway but… BE CAREFUL with your incisors!

Ingredients QUICK MINI PIZZA TREE
- 1 package puff pastry
- 2 tablespoons Grana Padano cheese, grated (in small cubes)
- 2 slices salami (Golfetta)
- 1 egg (for brushing)
- 3 cherry mozzarella ball (chopped)
- to taste tomato sauce (Datterini Mutti)
- to taste dried oregano

TO PREPARE THE QUICK MINI PIZZA TREE
I preheat the oven to 375°F (convection) for me and line the baking sheet with a piece of parchment paper.
I unroll the package of puff pastry and cut out 8 triangles with the mold.
If you’re skilled, trace them by hand with a sharp little knife… I can’t do it!
With the tines of a fork, I make some holes on each triangle then brush with a little beaten egg on each mini pizza triangle.
I arrange the tree of puff pastry triangles on the baking sheet and then bake for 4/5 minutes, maybe even less!
As soon as the mini pizzas are a little baked, I remove the tray with a THICK MITT and arrange on top of each a little tomato, some salami, a few cubes of mozzarella, and diced Grana.
I crumble a little dried oregano and finish baking the quick mini pizza tree!
As soon as the tray came out, I ate half of them!
