We can go wild; the important thing is that the filling is quite firm, so you can use classic custard, ricotta cream, mascarpone cream, chocolate cream… fill the quick pandoro cannoli with whatever you like!
Remember before making the Sicilian-like cannoli you need to flatten the slices of pandoro with a rolling pin and, if necessary, join them using a drop of water by pressing the two parts firmly.

Quick Pandoro Cannoli

Ingredients

  • 1 pandoro
  • 12.3 oz ricotta
  • 3 tbsps powdered sugar
  • to taste candied cherries
  • to taste chocolate chips
  • to taste sugar sprinkles
  • to taste ground pistachios

Preparation

  • For the cannoli slice the holiday cake into slices about 0.4 inches thick, then use a cookie cutter to mark a circle: mine is 4.7 inches.

  • Lightly butter the cannoli tubes and wrap them with the pandoro slice, sealing the two parts with a drop of water.

  • Place everything on a baking sheet and bake at 356°F for about 10 minutes or depending on the characteristics of your appliance.

  • While the pandoro cannoli are browning, prepare the cream by mixing ricotta and powdered sugar very well, making the cream shiny and smooth.

  • Let the cannoli cool and then using a piping bag, fill them gently and add the final decoration of your choice!
