The quick panettone cakes are, in my case, small cakes designed for small gifts or also as place cards at the lunches of the upcoming end-of-year holidays and contain the typical ingredients of the classic panettone, namely mixed candied fruits and sultanas.
The aroma is that of the vanilla bean and in my opinion, we can also dare with rum or another liquor that blends well with the other ingredients placed in the batter of the quick Christmas-like panettone cake.
If you like, you can also add 1/4 cup of nuts such as chopped almonds or walnuts…as always, the final choice is yours!
I preferred to add a little sugar crystals and some almond slivers before baking because the picky one at home doesn’t like these ingredients, and so it’s quicker for him to remove them…and he doesn’t know what he’s missing, poor thing!
You can put the batter in a round mold or a large mold shaped like a tree and/or star…

INGREDIENTS FOR QUICK PANETTONE CAKE

- 4 oz oz candied fruits (mixed and diced)
- 3.5 oz oz sultanas
- 3 eggs
- 3.5 oz oz butter
- 3.5 oz oz sugar
- 1 tbsp vanilla extract
- 1/4 cup cup milk (50/60 depending on the absorption of the powders)
- 1.75 cups cups all-purpose flour (+ 1 tbsp for flouring raisins and candied fruits)
- 1.75 oz oz almond flour
- 1 tsp baking powder
- 1 tbsp sugar crystals
- 1 tbsp almonds (in slivers)

QUICK PANETTONE CAKE RECIPE PREPARATION
For the preparation of this soft delicate panettone-like recipe, I put the dry ingredients in a bowl, thus sifting together the flour, baking powder, and almond flour.
In another bowl, I whip the soft butter with the sugar, then add the eggs one at a time.
In a cup, I put raisins and candied fruits and add 1 tablespoon of flour or a little more so that these ingredients integrate better into the batter of the quick panettone cake and don’t sink to the bottom of the cake pan.
I pour the dry ingredients alternating them with milk (which you can mix with a bottle cap of rum) and lastly, I add to the already formed batter the candied fruits, raisins, and vanilla extract.
The batter is soft, easy to put into the mold or molds, and after leveling everything well, I add the sugar crystals and the almond slivers arranging them randomly for me.
All that’s left is to bake at 350°F for about 30 minutes for small molds or a little more for large or normal molds, always paying attention and adjusting the cooking according to the characteristics of our appliance.
I let it cool slightly and serve at the table or wrap a present with appropriate paper and colored and Christmas ribbons and package ties!
