QUICK PUFF PASTRY with Red Onion, Potatoes, and Gorgonzola

The quick puff pastry with red onion, potatoes, and gorgonzola is a quick idea for a tasty and super easy appetizer but also for a savory snack to make at the last minute!
The ready-made puff pastry is ideal for many sweet and savory preparations and today, after unrolling the package, I filled it with a thin layer of mascarpone mixed with gorgonzola (if you can’t find the ready-made package, mix them yourself), some red onions, and some potato slices cut rather thinly with the mandolin.
You can also use pasta brise and flavor it all with slices of olives, pieces of tuna, and other spices, such as a pinch of chili pepper!

  • 1 package puff pastry (rectangular for me)
  • 200 g mascarpone and gorgonzola
  • 2 red onions
  • 2 medium potatoes
  • to taste extra virgin olive oil
  • to taste dried oregano
  • to taste pepper
  • to taste salt

POTATO PEELER

FOR THE PREPARATION OF THE QUICK PUFF PASTRY WITH RED ONION, POTATOES, AND GORGONZOLA RECIPE

  • Turn on the oven to 356/374°F (180/190°C) static mode and then quickly prepare our quick puff pastry with red onion, potatoes, and gorgonzola!

  • Mix the gorgonzola with the mascarpone in a cup to make it creamy.

    Unroll the puff pastry on the baking pan, keeping the parchment paper already contained in the original package.

  • Peel the potatoes and onions and cut both into thin slices with a very sharp knife.

  • Spread the mascarpone and gorgonzola cream evenly over the puff pastry.

  • Add the red onion rings and then the thin potato slices, covering the entire cheese layer.

  • Season with salt and pepper, add a couple of pinches of oregano, and a drizzle of extra virgin olive oil.

  • Now bake the quick puff pastry with red onion, potatoes, and gorgonzola at 356/374°F (180/190°C) for about 25 minutes or until the edges are golden and crispy.

  • Let the savory pie cool slightly and after cutting it into squares, serve it at the table…. just add 2 hard-boiled eggs and a nice bowl of raw vegetables for a rich and appetizing meal!
