Quick savory tree snacks with a dough added with grated Parmesan cheese and a mince of pitted Taggiasca olives for me from the ALDI brand.
Personally, I love appetizers as they allow me to make a thousand combinations and creative shapes, and I have published an enormous number on the blog!
Clearly, given the period, I used tree-shaped molds for these savory cookies as creative appetizers, but we can use a glass to make buttons and vary the mix by adding chopped sun-dried tomatoes, herbs, and spices like aromatic herbs, paprika, and chili pepper!

Ingredients
- 1.25 cups all-purpose flour
- 2 eggs
- 1.25 cups grated Parmesan (or grated Grana)
- 7 tbsps butter
- 3.5 oz Taggiasca olives (for me from the ALDI brand and finely chopped)

Steps
1) First, preheat the oven to 375°F. In a bowl, mix the sifted flour with 3/4 cup of the chosen grated cheese.
2) Add the butter cut into small pieces and only the egg yolks, keeping the egg whites in the fridge during the resting time for the Christmas savory cookies.
3) Chop the black Taggiasca olives with a knife and mix them in, kneading by hand using disposable gloves if needed …
4) Make a loaf, wrap it in food-grade plastic wrap, and place it in the fridge for about 30 minutes to become uniformly compact.
5) After the indicated time, roll the dough on a board or surface for the tree-shaped appetizers, using a little flour if necessary.
6) The thickness is about 1/5 inch, so they are not too thick and cook quickly. In this case, I use tree-shaped molds, but… use your imagination or the theme of your menu.
7) As I prepare them, I place them on a baking sheet lined with parchment paper and re-knead everything until the prepared loaf is finished.
8) Brush the savory tree snacks with the remaining egg white and add a pinch of remaining grated cheese (1/4 cup) on each to enhance the flavor of these appetizer saltines.
9) Quickly bake them for about 20/25 minutes, or according to your appliance’s characteristics.
10) Let them cool, then serve with tuna mousse, for example, salmon mousse or mortadella mousse.
