Ingredients for QUICK SLICES IN PINK SAUCE RECIPE

  • 8 slices pork loin (very thin)
  • 1 tablespoon tomato paste
  • 2 tablespoons mascarpone
  • as needed milk (optional)
  • 1 sprig parsley (finely chopped)
  • 2 knob of butter (or extra virgin olive oil)
  • as needed salt and pepper
  • as needed white wine (still)
  • as needed all-purpose flour

FOR THE PREPARATION OF THE QUICK SLICES IN PINK SAUCE RECIPE

  • Remove any excess fat and flour the pork loin slices.

    In a large frying pan, pour a little extra virgin olive oil and when it is hot, place the slices in a single layer if possible.

  • Lower the heat and add the tomato paste, mixing well.

    Also add the mascarpone and a few tablespoons of milk, trying to create a creamy sauce that completely envelops the pork loin slices.

  • Season with salt and pepper and assemble the plates, making sure to place a little freshly chopped parsley on each scaloppina already sauced.

  • I chose to accompany this dish with simple boiled potatoes dressed with a drop of extra virgin olive oil… but the creamy sauce is enough to flavor them and make this dish a pleasant and really quick second course!
