Quick and savory tree-shaped appetizers with a dough enriched with grated Parmesan cheese and a finely chopped mix of Taggiasca olives from ALDI.
Personally, I love appetizers as they allow me to create numerous combinations and creative shapes, and I’ve published a huge number on the blog!
Obviously, given the season, I used tree-shaped cutters for these savory cookies as creative appetizers, but we can use a glass to make buttons and vary the mixture by adding chopped sun-dried tomatoes, herbs, and spices like aromatic herbs, paprika, and chili pepper!

Ingredients
- 1 1/4 cups all-purpose flour
- 2 eggs
- 1 1/3 cups grated Parmesan cheese (or grated Grana cheese)
- 7 tbsps butter
- 3 1/2 oz Taggiasca olives (from ALDI, finely chopped)

Steps
1) First, preheat the oven to static mode at 375°F, then in a bowl mix the sifted flour with 100 grams of the chosen grated cheese.
2) Then add the butter cut into small pieces and only the egg yolks, keeping the egg whites in the refrigerator during the resting time for the savory Christmas cookies.
3) Finely chop the pitted Taggiasca olives with a knife and mix them by hand using disposable gloves, otherwise…
4) Form a dough ball, wrap it in plastic wrap, and place it in the refrigerator for about 30 minutes to compact evenly.
5) After the indicated time, roll out the dough for the tree-shaped appetizers on a work surface, using a little flour if necessary.
6) The thickness is about 0.2 inches, so they are not too thick and will cook quickly. In this case, I use tree-shaped cutters, but…use your creativity or fit your menu’s theme.
7) As I prepare them, I place them on the baking sheet lined with parchment paper and rework the remaining dough ball until all is used.
8) Brush the savory tree-shaped appetizers with the remaining egg white and add a pinch of the remaining grated cheese (30 grams) to each for extra flavor to these appetizer saltines.
9) Bake quickly for about 20/25 minutes or according to your appliance’s characteristics.
10) Let cool, then serve on the table with tuna mousse, for example, salmon mousse, or mortadella mousse.
