My son Andrea, not satisfied with having lost many kilograms, has become a real fanatic of “healthy” food meaning low-calorie food and he stresses me out (and already, guys, he stressed me a lot before so….) so that I prepare very, very light lunches and dinners!! Honestly, when we go out to lunch he doesn’t watch the calories and basically pig outs!
Sometimes I try to humor him anyway because in summer it is better to eat foods like vegetables and salads without overloading the body too much.
Today I prepared a few recipes based on vegetables and one that we really appreciated are these quick and easy zucchini patties in a pan without a drop of oil because I simply cooked them by placing a sheet of parchment paper on the pan.
They are delicious with just a little Parmigiano Reggiano and breadcrumbs, a real delight!!! If you want them even tastier, add small cubes of cooked ham, prosciutto crudo, speck or pancetta to the mixture!
Instead of Parmigiano use Pecorino Romano for a stronger flavor… in short as always take a look in your fridge and add what you have on hand!
The quick and easy recipe for zucchini patties in a pan is perfect for a fast lunch or a tasty dinner, loved by adults and children and can also be served as finger-food appetizers for a get-together with friends.
TIPS AND VARIATIONS FOR PAN-FRIED ZUCCHINI PATTIES (not deep-fried)
• You can stuff them with a small cube of cheese so you’ll have gooey patties with a soft center
• For a vegan version replace the egg with a little chickpea flour mixed with a bit of water
• If you add a little grated zest of untreated or organic lemon you give the zucchini recipe a fresh and aromatic touch.
HOW TO SERVE LIGHT ZUCCHINI PATTIES FOR LUNCH OR DINNER
1. Light sides:
• Tropea onion salad with datterini cherry tomatoes
• Mixed grilled vegetables
• julienne carrot salad dressed with lemon juice, extra virgin olive oil and parsley
2. Grains or bread
• Quinoa with mixed vegetables
• Romagna flatbread (piadina) lightly warmed
• Bulgur with aromatic herbs
3. Sauces and condiments
• Chickpea hummus
• Greek tzatziki sauce
• Light mayonnaise
4. For a buffet or aperitivo
• Cheese board with feta, goat cheese and mozzarella
• Bresaola or prosciutto crudo rolls
• Golden bruschette with confit cherry tomatoes and fresh basil

QUICK ZUCCHINI PATTIES IN A PAN

Ingredients for QUICK ZUCCHINI PATTIES IN A PAN
- 1 zucchini (about 9 oz (approx. 250 g))
- 1 medium egg
- to taste breadcrumbs
- to taste Parmigiano Reggiano (grated)
- 1 pinch fresh parsley (finely chopped)
- salt and pepper

FOR PREPARATION OF THE RECIPE: ZUCCHINI PATTIES IN A PAN
Wash and trim the zucchini and grate it julienne-style with the appropriate grater.
Place this grated vegetable pulp in a colander, add a pinch of salt and let it rest for about 30 minutes, preferably with a weight on top.
After the resting time, squeeze them very well and place them in a bowl.
Continue preparing the light, QUICK patties without frying and without meat by adding the egg and gradually the grated cheese and the breadcrumbs.
Slowly increase the amounts of these ingredients to obtain a homogeneous and easily moldable mixture.
Then shape the mixture into zucchini patties which you will cook, if you like as I did, in a pan lined with parchment paper.
Keep the heat moderate and once one side is cooked, flip them and continue until fully cooked.
They are delicious warm but also “cold” and in my opinion they would be even more flavorful (but also more caloric) if served with a slightly spicy tomato sauce for dipping…

Tips and notes
Among vegetables, zucchini are the least caloric and the most digestible. They are rich in manganese and potassium and, having a high satiety power, they are perfect for those who want a low-calorie diet or for people affected by metabolic diseases such as hypertension and diabetes. Their mild taste lends itself to many delicious and appetizing pairings!
