RABBIT WITH BEER

Today RECIPE OF rabbit with beer, a very tasty dish you can serve with simple mashed potatoes or another not too flavorful side dish because it is a main course with an intense flavor.

The rabbit is a lean meat often sold whole or portioned, and the most common cuts are the leg, saddle, and shoulders to prepare main courses in a pan, roasted, or stewed.

In terms of nutritional values, rabbit meat is low in fat, low-calorie (118cal/100g), has high-quality proteins, and is very digestible, making it suitable also for children, the elderly, and those who practice sports.

However, consumption of rabbit meat is significantly declining according to recent surveys, perhaps due to the changing demands of a population often oriented towards vegan diets.

Ingredients RECIPE RABBIT WITH BEER

  • 2.2 lbs rabbit (in pieces)
  • 7 oz light beer
  • 3 cloves garlic
  • 3 sprigs rosemary
  • 1.8 oz bacon (slab)
  • 1 leaf bay leaf
  • 1 pinch brown sugar
  • to taste extra virgin olive oil
  • to taste lemon zest (untreated)

Preparation RECIPE RABBIT WITH BEER

  • In a large pan, sauté the chopped rosemary with garlic very finely and with 3-4 tablespoons of extra virgin olive oil.

    Add the diced bacon and continue cooking for a few minutes.

    Add the rabbit pieces and brown them for about 5 minutes.

  • Moderately salt and pepper, deglaze with the beer and cook covered for about 1 hour and 30 minutes, adding a pinch of brown sugar.

    If the rabbit with beer dries too much, add more beer.

  • Once cooking is finished, complete the rabbit with beer by sprinkling the preparation with the grated lemon zest which will balance the taste by giving a balanced flavor to the dish.
