The rice and julienne zucchini gratin with mozzarella and diced cooked ham is, in my opinion, a different type of baked first course — tasty at any temperature and easy to prepare (better if served at room temperature).
You can make this casserole without the mozzarella and the cooked ham and increase the vegetables, adding plenty of diced carrots and peppers and perhaps finishing with a generous sprinkle of grated Parmesan before baking!
This gratin is also perfect if prepared in advance because it’s great at room temperature, and you can even take it along for the classic picnic on Easter Monday.

- 3/4 cup rice (I had Carnaroli and used it!)
- 1 egg
- 1/2 cup milk
- 1/2 cup light cream (light (about 130 g / 4.4 fl oz))
- 2 zucchini (julienne)
- 3.5 oz mozzarella (julienne)
- 1 spring onion
- 1 tablespoon vegetable oil (for the baking dish)
- 1 tablespoon breadcrumbs (for the baking dish)

FOR THE PREPARATION OF THE RICE AND JULIENNE ZUCCHINI GRATIN RECIPE
Preheat the oven to 356°F and, after washing them, cut the zucchinis into julienne strips, placing them directly in a mixing bowl.
Thinly slice the fresh spring onion and add it to the bowl together with
the chosen rice, the julienne mozzarella, the diced cooked ham and mix the ingredients well.
In a bowl beat the egg with the milk and the light cream and then pour this mixture over the rice and zucchini mixture.
Season with salt and pepper and prepare the baking dish.
Lightly grease a baking dish with a little vegetable oil and sprinkle with breadcrumbs, removing any excess.
Pour in the rice, zucchini and ham mixture, level it, and bake the savory zucchini gratin for about 40–45 minutes (or according to your oven).
I preferred to make a small test cut to ensure the rice and mozzarella gratin was perfectly cooked, then I let it cool completely before serving for tasting!
Simple and almost creamy…
