The rice and milk soup is a dish that reminds me of my mom because it was that tender creamy thing that today would be called comfort food that she sometimes prepared, considering it the perfect food to put something quick and delicious in your belly!
I used rice for risotto, the Roma variety, but you can also choose Vialone nano or another one you have at home.

- 1.5 tbsp butter
- 1.25 cups milk (for me whole Granarolo)
- 0.63 cups water
- 0.5 cups Roma rice
- to taste salt

Steps
The recipe for rice and milk soup is really simple!
I pour the milk and water into a saucepan and bring the liquid to a boil over moderate heat.
Now, I add the rice, add salt and a pat of butter, and continue cooking for about 20/25 minutes or according to your taste and chosen rice variety.
Once the rice and milk soup is cooked, I turn off the heat and let it rest for a few minutes, stirring occasionally.
Serve at the table and enjoy your meal!
Frankly, I don’t think adding grated cheese, either grana or parmesan, is appropriate because this rice soup cooked in milk has a very delicate taste and should remain that way for me…
But as always, it’s up to you and your personal taste…
