RICE PIE with zucchini ham and cheese

Rice pie with zucchini ham and cheese, a savory pie that’s also good at room temperature and that you can vary as you like!

You can also make it with leftover white rice and if you like, you can flavor it with some saffron dissolved in a small amount of hot water or vegetable broth. The chosen cheese should be melty because it will add more flavor to the mixture and, visually speaking, it has its own appeal!

Instead of zucchini, you can use other vegetables of your choice, but remember that DEPENDING on what you choose, you may need to pre-cook them in a pan or on the grill, so … adjust the timings! Zucchini used raw like this stay slightly crunchy, and this texture is very pleasant to taste, at least for me!

INGREDIENTS RECIPE RICE PIE WITH ZUCCHINI HAM AND CHEESE

  • 1 1/4 cups rice
  • 4 oz melty cheese (sliced)
  • 1 medium zucchini (sliced into rounds)
  • 7 oz cooked ham
  • 1 medium egg
  • 3 tablespoons Grana Padano (grated + extra before baking)
  • 2 tablespoons extra virgin olive oil
  • to taste salt and pepper

FOR THE PREPARATION OF THE RICE PIE WITH ZUCCHINI HAM AND CHEESE RECIPE

  • Boil the rice,

    for the time indicated on the package.
    Cool it quickly under running water or
    by stirring it continuously with a little olive oil.

  • Put it in a bowl, then add the lightly beaten egg, EVO oil, grated Grana, and season with salt and pepper.

  • Oil a baking tin and arrange roughly half of the rice.

    Make a layer of washed, trimmed, and sliced zucchini about 1/4 inch thick.

  • Now add the sliced cooked ham, and finally the cheese, also sliced.

    Now pour the remaining rice on top, leveling it well.

  • Sprinkle the rice pie with zucchini, ham, and cheese with extra grated Grana.

    Bake in a preheated oven at 392°F for about 10/15 minutes or depending on your oven’s characteristics.

  • Take out the savory rice pie, let it rest for 5 minutes, then serve it at the table! It’s simple, tasty, and very inviting… Enjoy your meal!! Annalisa
