Ingredients
- 1 pineapple (4/5 slices in total)
- 9 oz shrimp (also frozen)
- 7 oz Basmati rice
- 1 small onion
- to taste curry
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste cilantro
- to taste fresh ginger
Preparation
• To prepare the rice salad with shrimp and pineapple, we start by adding a drizzle of Evo oil and the finely chopped onion to a pan.
Once golden, add the rice, letting it toast for a couple of minutes.
Pour in water and continue cooking in the pan.
• Meanwhile, slice the pineapple to get as many slices as possible, then cut them into not too small cubes, clearly removing the too fibrous central part.
Also save the juice produced by cutting the pulp into pieces.
If you want to serve the rice in the pineapple, carve the fruit well to have the maximum size to contain the preparation
• When the rice is almost cooked, add the washed and cleaned shrimp, finishing the cooking.
Also add the pineapple cubes and the fruit juice.
Adjust the seasoning with salt, pepper, and sprinkle the rice salad with shrimp and pineapple with curry and grated ginger.
Pour some extra virgin olive oil to enhance the preparation.
• Mix everything well, letting the preparation cool, which is clearly preferable to cook in advance so that it flavors perfectly.
• At the right time, serve the rice salad with shrimp and pineapple in individual bowls or in each half-pineapple adequately emptied of the fruit’s pulp.
It is a fresh and appetizing dish with an exotic taste, perfect as a main dish on a hot summer day!
