Ricotta and Lemon Spaghetti-One Pot

Ricotta and lemon spaghetti-one pot is a tasty first course with a cooking method that requires all the ingredients to be placed together in the pan and slowly brought to the right moment of cooking to be enjoyed at the table.

With this method (one pot or one pot pasta), the pasta, by releasing the starch, becomes the key element to best combine and blend the ingredients, creating a very appetizing unicum! It’s a typically American idea not very common here… unless you often go sailing, hehe!

I’ve read that it is recommended to add 240 ml of water for 350 g of pasta but at my house, this liquid is not enough, so… I increased the amounts! Keep in mind that if there is some vegetable among the ingredients, it releases water, so… dose it each time based on the ingredients used!! Other seasonings could be with tomato sauce and sausage, with zucchini and lots of aromatic herbs, with peppers and robiola …

Ingredients RICOTTA AND LEMON SPAGHETTI ONE POT

  • 5.6 oz spaghetti
  • 3 tbsp cow's milk ricotta
  • 1 mozzarella (almost all the weight …)
  • 1 lemon
  • 1 shallot
  • as needed water (add it little by little)
  • 1 tbsp Extra virgin olive oil
  • as needed Grana Padano (grated optional)
  • as needed salt and pepper

  • Wok
  • High-sided saucepans

FOR THE PREPARATION OF THE RICOTTA AND LEMON SPAGHETTI ONE POT RECIPE

  • Slice and then cut into wedges half a lemon and the peeled shallot.
    In the pan, put the Evo oil and water.

  • Then add the spaghetti cooking for about 15 minutes, always stirring until the liquid is fully absorbed but checking its dosage.

  • Now put the mozzarella diced and the ricotta in the pan, letting everything melt to create a tasty cream.

  • Lastly, add the juice of the remaining half lemon and adjust with salt and pepper.

  • Toss everything well and serve these appetizing ricotta and lemon-one pot spaghetti! A delicious first course for me and hopefully for you too… Enjoy your meal! Annalisa
